About the Coffee: Byron Double Fermentation Washed coffee is produced at El Vergel, located 1850 MASL in Sonson, Antioquia, Colombia. This unique coffee undergoes a double fermentation process, first fermented for 12 hours and then for an additional 168 hours in GrainPro bags. The cherries are then washed and dried for 10 days on drying beds. This meticulous process highlights vibrant notes of pineapple, honey, and strawberries, creating a rich and complex flavor profile. Byron named this coffee "Baluarte," meaning stronghold, as it reflects the coffee's strength and the enhanced qualities of his innovative approach.
