The cherries are then washed and dried for 10 days on drying beds. This meticulous process highlights vibrant notes of pineapple, honey, and strawberries, creating a rich and complex flavor profile. Byron named this coffee "Baluarte," meaning stronghold, as it reflects the coffee's strength and the enhanced qualities of his innovative approach.
