His farm El Vergel sits at the very top of the mountain — a 1.5-hectare plot surrounded by drying beds and a small coffee roaster, designed for experimentation. This Baluarte lot is an extended double-fermentation washed: cherries spend 12 hours in their first ferment, then another 168 in GrainPro bags, before being washed and dried for ten days on raised beds. The result is layered and unmistakably fruit-forward.
