Red Sunset, he called it. Andres Cardona’s Semi-Washed brilliance is a result of his curiosity and desire to learn. This Castillo and Colombia varieties lot, grown at 1600 masl, defies the common assumption in Specialty Coffee that one needs to grow an exotic variety at high altitudes to produce an excellent Cup. It's sweet like Sugar Cane, Floral, and Citrus.
Purchased several different roasts over 7/4 sale including Colombia Andres and Colombia Sara Tobon w/ Red Grape, Cacao Nibs, and Strawberry (do not see it currently listed or archived). Both are considered and taste light, listed as 2*.
I found them both to be smooth, slight bitter after taste, and better brewed to a 1:1 ration instead of 1 scoop less than cups of water to bring out a flavor. Beans are ground using Baratza Encore at 31 of 50 and do not have weird shavings or shredding of beans. You might be able to go finer, but it has been consistent for me so I do not want to tinker.
What I particularly like about their lighter roasts is that they are not? less acidic to the point where it causes milk to curdle. I've had Nicaragua or Honduras light roasts from different roasters where any type of frothy oat/almond milk clump up and it becomes gross. Not these batches, or at least in my experience.
Hopefully, they bring these variations back or something similar soon.
