This coffee comes from La Bastilla Coffee Estates in the Jinotega region of Nicaragua, grown between 1300 and 1500 meters above sea level. Made from the Geisha variety, this lot undergoes a natural anaerobic process in which whole cherries are fermented in temperature-controlled, sealed tanks before drying.
The controlled fermentation enhances tropical fruit expression while preserving clarity in the cup. Expect ripe mango and papaya up front, layered with honeyed sweetness and a refined green tea finish. The green tea character brings lift and structure, keeping the profile elegant rather than heavy.
We selected this coffee as our contribution to this year’s Black Is Beautiful, an annual collaborative release that celebrates and showcases Black-led roasters across the country. This Geisha reflects our sourcing philosophy and roasting style: expressive, intentional, and balanced.
The result is vibrant, composed, and aromatic, offering a dynamic experience as both filter and a lighter, expressive espresso.

La Bastilla Coffee Estates is a sustainability-focused producer in Jinotega, Nicaragua, Rainforest Alliance certified since 2003. In recent years, the estate has invested in precision fermentation techniques, including stainless steel anaerobic tanks with temperature control and sampling valves to monitor mucilage levels throughout fermentation.
