About the Coffee: This coffee comes from Juanachute Micromill, a family-run farm and mill in the high elevations of Tarrazú, Costa Rica. Made from the Villa Sarchi variety, this lot undergoes a natural anaerobic process where whole cherries are fermented in a sealed, oxygen-free environment before drying. This controlled fermentation brings depth and complexity to the cup, highlighting ripe blackberry sweetness, delicate rose florals, and a smooth dark chocolate finish. The result is expressive, structured, and deeply aromatic, offering a dynamic experience as both filter and espresso.
