Peach, Milk Chocolate, Caramel — this cup from the Bonilla family’s Don Mayo micro mill is as sweet and balanced as it is vibrant.
La Loma, a farm in León Cortés de Tarrazú, sits between 1750–1875 meters and is planted with Caturra and Catuaí cultivars. Since 2003, Hector Bonilla and his sons have perfected their process, overseeing every step from harvest to milling. Using a water-efficient Penagos system for mechanical washing, patio and bed drying under a new shade canopy, and on-site dry milling, they bring out the very best of Tarrazú.
